The bitrate decides how much sound detail each second of MP3 keeps, and how big the file gets. A one-hour podcast is roughly 140 MB at 320 kbps and roughly 55 MB at 128 kbps.

One honest note: YouTube's own best audio stream is usually AAC at about 128 kbps or Opus at about 160 kbps. A 320 kbps MP3 keeps everything that stream has and avoids extra loss from a second squeeze, but no converter can add detail that was never uploaded. If you want the untouched original, pick M4A: it is the AAC stream itself, saved without converting.
Real MP3, not a renamed file
Some converters hand you an M4A or WebM file with ".mp3" stuck on the end.
